Hydrosome Labs Selected for Unreasonable Food 2025 Collaboration with Unreasonable Group and Mars Snacking

Chicago-Based Company Joins 13 Other Ventures in a Global Initiative to Advance Sustainable Food Systems

CHICAGO — Hydrosome Labs, a biotechnology company pioneering ultrafine bubble (UFB) technology, recently participated in the Unreasonable Food 2025 collaboration with Unreasonable Group and Mars Snacking, joining 13 other ventures tackling global challenges in sustainable food. The company was sought out for its innovative approach to improving fermentation and nutrient delivery, contributing to the program’s mission of developing scalable, resilient solutions for the future of food.

“Being part of the Unreasonable Food 2025 program was an incredible experience for our team,” said Paul Gadbut, CEO of Hydrosome Labs. “It was inspiring to connect with other ventures tackling complex challenges in the food system, and to collaborate with Mars Snacking, a fellow Chicago-based company. The experience helped us think even bigger about how our ultrafine bubble technology can improve fermentation efficiency, nutrient delivery, flavor, and texture—ultimately leading to higher-quality, more nutritious food products for consumers at scale. Equally important, we see our work as contributing to a more sustainable future by advancing solutions that meet the needs of the present without compromising the ability of future generations to meet their own. This means addressing the interconnected pillars of environmental protection, economic viability,—while playing a role in tackling climate change, improving resource management, and supporting long-term well-being for both people and the planet.”

Hydrosome Labs’ recent research findings helped capture the attention of the Unreasonable Food program. Conducted in partnership with the University of Birmingham, one study showed that yeast grown with UFB-treated water metabolized sugar faster and increased oxygen uptake, making fermentation more efficient. Another preclinical study suggested UFB water could support gut health by boosting beneficial bacteria and reducing inflammation, pointing to the potential for healthier, nutrient-rich foods. These findings highlight the technology’s versatility across applications, including fermentation, food and beverages, personal care, and more.

The company’s research and innovative approach have also drawn attention locally, earning recognition from Chicago’s biomanufacturing community. Hydrosome Labs was named a Blazer Award winner in the “Consumerists” category at the 2025 Chicago Inno Fire Awards, which honor standout companies that have made a significant impact on Chicago’s tech and innovation scene over the past year. The company is also a Top 100 finalist for the 24th annual Chicago Innovation Awards, recognizing organizations driving tangible change in their industries.

Founded in 2019, Hydrosome Labs has developed a platform technology applying ultrafine bubble science across life sciences, nutrition, personal care, and fermentation. The company collaborates with more than 40 partners, including leading research institutions such as the University of Illinois, to validate the technology’s benefits for microbiome health and fermentation efficiency. By improving nutrient delivery and oxygen transfer, Hydrosome Labs offers scalable solutions that reduce production costs, energy use, and contamination risks, helping companies accelerate product development without costly infrastructure changes.
